Morrocan Cooking Class

Mohammed Nahir, Professor of English, True Believer, Destination Expert for Marrakech and well-known chef and Moroccan cookbook translator was our instructor. Frank and Donna had taken this class before and enjoyed it so much that they insisted we join them for another round.

The class was held in our hotel La Maison Arabe. One other couple from Ireland joined us. We started our class with a field trip to the nearby spice shop where Chef Nahir explained the various spices and their uses. There are many homeopathic or medical uses for diseases and conditions that Moroccans have been using for centuries. However, they have never been translated into English. That's a shame because I would really like to try the cure for snoring. . .Jon maybe more than me!

Outfitted in aprons and each with our own cooking station, we settled in to learn to make chicken Tagine, Taktuka Salad and Zalouk Salad. We each took a turn  kneading the bread made with semolina and learned to make flowers from tomato skins. I have to brag that my tomato flower was the best. (Donna might have beaten me on a better day for her but Frank can not claim the rose one of the assistants made for him as an entry.)




Here we are ready to taste the fruits of our labors. And, it was mighty good!
